Two young mushroom enthusiasts from Paris and Athens spent last week at Ekofungi learning about the specifics of industrial mushroom production. Jennifer Kendzior from Terra Candido SAS is interested in using urban wastes (e.g. spent coffee grounds) to produce urban mushrooms; Terra Candido is a distributor of fine foods in Paris. Andriana Kechagia is planning a large scale production of oyster and shiitake mushrooms in Athens. Andriana came with her fiance Salvador, a compost expert. We hope your efforts will come to fruition.
